La Mahonia aquifolium (Pursh) Nutt. famiglia Berberidaceae, è molto diffusa in Italia soprattutto come pianta ornamentale nei giardini. Pochissimi sanno che non solo è una pianta dalle proprietà fitoterapiche eccezionali (soprattutto fiori e corteccia) ma che i frutti sono assolutamente commestibili (e buonissimi!). A giugno, luglio e agosto si raccolgono i frutti, da utilizzare in diverse ricette e da fare essiccare per decotti invernali. Sono frutti molto ricchi di pectina, quindi lo sciroppo proposto sarà gelatinoso! In alternativa allo sciroppo potete fare gelatine e marmellate che addenseranno molto facilmente senza aggiungere nient'altro se non lo zucchero.
I frutti sono tannici, astringenti e acidi. Se volete ridurre il sapore astringente basta farli essiccare o congelarli. Per il loro sapore sono adatti in dolci, liquori e salse, perché hanno un gusto complesso e non stucchevole. Sono uno dei miei frutti preferiti!

I frutti sono tannici, astringenti e acidi. Se volete ridurre il sapore astringente basta farli essiccare o congelarli. Per il loro sapore sono adatti in dolci, liquori e salse, perché hanno un gusto complesso e non stucchevole. Sono uno dei miei frutti preferiti!
